Perfect for the Summer Season – Foodadit Team Recipes

Now that summer is well and truly on its way the Foodadit team got together at Nina’s place to share a few recipes to celebrate the rise in temperature.


Alanna kicked us off with a cool and light, sugar-free Brazil Nut Milk with pear, coconut and spinach.

The UN has named 2016 the International Year of Pulses (#IYP2016 on Twitter & Instagram), to raise awareness of the part they have to play in sustainable food production. These crops are the unsung heroes of nutrition, full of protein and fibre.  With this in mind, I made a simple Lentil, Rocket, Rosemary and Lemon Salad.  Lentils in salads are both filling yet light, so perfect for picnics.


To keep us cool, Nina shared her mouthwatering recipe for cold Gazpacho Soup with us. Tomatoes are in season now, so expect extra flavour! The soup is normally completely raw, but to get the most from the onion and garlic, and to aid digestion, Nina sweated them gently in the pan before adding in the other ingredients.
